Pizza Casserole

Tried a new recipe courtesy of www.allrecipes.com.

Pizza Casserole

  • 2 cups uncooked pasta of choice (I used penne)
  • 1/2 pound cubed chicken breast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 cup sliced turkey pepperoni sausage
  • 16 ounces pizza sauce or pasta sauce
  • 4 tablespoons milk
  • 2 cups shredded mozzarella cheese
  • 1 can artichoke hearts, drained and chopped
  • a handful of sun dried tomatoes
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook noodles according to package directions.
  3. In a medium skillet over medium-high heat, cook the chicken with the onion, garlic and green bell pepper. Drain excess fat. Stir in the noodles, pepperoni, pizza sauce, artichoke hearts, sun dried tomatoes and milk, and mix well. Pour this mixture into a 9" x 13" casserole dish.
  4. Bake at 350 degrees F (175 degrees C) for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes.
