Frisbee Fun

I work very close to Seattle University so I take my girls there on my lunch break whenever I can. Today was Sadie's day and we broke out the frisbee for her. She loves this place - and obviously has an affinity for frisbees also.

Cauliflower Pizza Crust

So the recipe for today's creation can be found here but it should be noted that I make my cauliflower rice using this method.

All prepped and ready to bake.
 Nice and golden brown after 15 minutes in the oven
 Toppings Prepped (sauce, mushrooms, mozza cheese, turkey pepperoni)

It was good! The seasonings on the crust is a must - really helped disguise the cauliflower and made it seem like real crust. Rob approved also.

Side note - this was my first time using my broiler in the oven. It's really uneven with it's temps! One side got crisper than the other (which you can see in the above pic). Just a note to remind myself to watch it carefully and rotate if it's going to be in the oven longer than a minute.

Recipe
  • 1 cup cooked, riced cauliflower
  • 1 egg
  • 1 cup mozzarella cheese
  • 1/2 tsp fennel
  • 1 tsp oregano
  • 2 tsp parsley
  • pizza or alfredo sauce
  • toppings (make sure meats are cooked)
  • mozzarella cheese
  1.  Preheat oven to 450 degrees Farenheit.  Spray a cookie sheet with non-stick spray.
  2. In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
  3. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
  4. Remove the pan from the oven. To the crust, add sauce, then toppings and cheese. Place under a broiler at high heat just until cheese is melted.

Almond Meal Pancakes

I wanted pancakes without the carbs so I made some almond meal pancakes. Pretty good and Rob agrees. The only minor modification I did was I used apple sauce in place of oil and added a teaspoon of vanilla. No sweetener - the apple sauce is naturally sweet enough. Plus I topped it with strawberries so definitely no additional sweetener required.


Recipe Breakdown (makes 6 four-inch pancakes)
  • 1 cup almond meal
  • 2 eggs
  • 1/4 cup water (for puffier pancakes, you can use sparkling water)
  • 2 Tablespoons Apple sauce
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla 
Cook up in a non-stick skillet like you would normal pancakes but they won't bubble like you would expect with normal pancakes. Flip when the underside is brown. Serve up with fruit of your choice, maybe some fruit preserves, and serve.

Spring Post!

Spring is trying really hard to come forward and tell us it is here. We're suffering from heavy rainfall in the pacific northwest... maybe we should plan our vacations this time of year. When you're desperate for sun but it can't quite make it to the party.
