Almond Meal Pancakes

I wanted pancakes without the carbs so I made some almond meal pancakes. Pretty good and Rob agrees. The only minor modification I did was I used apple sauce in place of oil and added a teaspoon of vanilla. No sweetener - the apple sauce is naturally sweet enough. Plus I topped it with strawberries so definitely no additional sweetener required.


Recipe Breakdown (makes 6 four-inch pancakes)
  • 1 cup almond meal
  • 2 eggs
  • 1/4 cup water (for puffier pancakes, you can use sparkling water)
  • 2 Tablespoons Apple sauce
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla 
Cook up in a non-stick skillet like you would normal pancakes but they won't bubble like you would expect with normal pancakes. Flip when the underside is brown. Serve up with fruit of your choice, maybe some fruit preserves, and serve.
